6679_Grilled Summer Squash or Zucchini 

This is my favorite way to prepare summer squash or zucchini at this time of year. – Judy Cutler, PT, Orthopedics Manager at CareGivers America Clarks Summit

What you’ll need:

  • 1/4 cup light olive oil
  • 2 cloves garlic crushed 
  • Other fresh herbs (chives, basil, thyme, oregano, etc.) minced
  1. Mix the above together
  2. Slice summer squash or zucchini lengthwise into 1/4 to 1/2 inch slices.  Place in a shallow pan and pour oil and herbs over them.  Turn to coat all sides
  3. Grill on hot grill about 3-4 minutes a side or until tender.  Enjoy!
