What you’ll need:
- 1/4 cup light olive oil
- 2 cloves garlic crushed
- Other fresh herbs (chives, basil, thyme, oregano, etc.) minced
- Mix the above together
- Slice summer squash or zucchini lengthwise into 1/4 to 1/2 inch slices. Place in a shallow pan and pour oil and herbs over them. Turn to coat all sides
- Grill on hot grill about 3-4 minutes a side or until tender. Enjoy!
